Hey there, y'all. Brendan here, with a mildly belated celebration of March 4th's International Pancake Day. This year it also overlapped with Fat Tuesday, aka Paczki Day, so there are probably people still recovering from the amount of bread they enjoyed yesterday (I can relate).

Putting that aside, we wanted to highlight a wonderful post from our friend and ambassador Vanessa Britton. Apart from having great taste in nutritious snack foods contained in convenient, ready-to-go pouches, she's also a great travel blogger, documenting her experiences with the cultures of the world. You should definitely give her content a look. 

In commemoration of yesterday's holiday she shared a great video of an underappreciated way to enjoy Nakee Butter: 

Additionally, I wanted to include this quick recipe for pancakes, because they are a wonderful breakfast food and I love them: 

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup milk (or plant-based alternative)
  • 1 egg
  • 1 tablespoon melted butter or oil
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined (a few lumps are okay—don’t overmix!).
  4. Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
  6. Serve warm with your favorite toppings—maple syrup, fruit, or a drizzle of Nakee Butter for extra protein! 🥜🍁
